The following needs to be completed on their respective days
Mondays – Closed
Tuesdays – Walk-in, Server Fridge, & Freezer + Change Dressing Bottles
Walk-in
Remove all expired or spoiled items
Wipe down shelves with a sanitized cloth.
Sweep and mop the floor
Consolidate open containers and label with new dates if needed.
Organize using FIFO (First In, First Out).
Server Fridge
Remove all items, discarding expired products.
Wipe interior and exterior surfaces, shelves, and door gaskets with sanitizer.
Restock in an organized manner using FIFO.
Freezer
Wipe down exterior.
Remove any frost build-up around the door frame.
Check for damaged or open packaging and discard as necessary.
Organize items by category.
Change Dressing Bottles
Swap old dressing bottles for new, ensuring to use a FIFO system when refilling.
Apply new date labels.
Wednesdays – Hood, Fans, and AC
Thoroughly wipe down the hood, all fans, and AC (ensure the surrounding area and the window are cleaned as well).
Thursdays – Trash Cans & Dust Pans + Change Dressing Bottles
Trash Cans
Empty all trash.
Wash inside and outside of cans with hot, soapy water or degreaser.
Rinse and sanitize.
Allow to dry before replacing liners.
Dust Pans
Remove debris stuck to the surface.
Wash with hot, soapy water; rinse and dry.
Store in a clean, dry location.
Change Dressing Bottles.
Swap old dressing bottles for new, ensuring to use a FIFO system when refilling.
Apply new date labels.
Fridays – Bug Zappers & Outside.
Bug Zappers.
Turn off and unplug before cleaning.
Remove the catching tray and dispose of debris.
Wipe down.
Replace the sticker is necessary.
Outside
Do a lap around the building, sweep and remove all trash.
Remove cobwebs and debris from exterior walls and light fixtures.
Saturdays - Hood, Fans, and AC + Change Dressing Bottles.
Thoroughly wipe down the hood, all fans, and AC (ensure the surrounding area and window are cleaned as well).
Change Dressing Bottles
Swap old dressing bottles for new, ensuring to use a FIFO system when refilling.
Apply new date labels.
Sundays – Deep Clean.
Move all equipment that can be safely moved (prep tables, shelving units, rolling carts, etc.).
Sweep and mop behind and under each item.
Wipe down walls, baseboards, and backs of equipment.
Check for signs of pests and report if any are found.
Return all items to their original positions.
